Nutritious snacking with sweet potatoes

Sweet potatoes make a wholesome snack. This starchy food is stomach filling and gives you an instant dose of energy. Yet, it is light, digestible and soothes your stomach and intestines with its rich starch content. It is great for all the three doshas, especially vata.

 

As a vegetable, sweet potatoes have an exceptionally high nutritional value. These are a rich source of vitamin A, C, B-complex vitamins, and minerals like magnesium, phosphorous, iron and potassium. Vitamin A improves vision while vitamin C boosts immunity. Magnesium is good for stress and uplifts mood. It also promotes bone, muscle and nerve health. Slice one large sweet potato into thin pieces and add a dash of spices like cumin, cardamom and cinnamon. Sprinkle coriander on top and spread a drizzle of cow ghee over each slice. Bake the dish for 15-20 minutes in an oven at high temperature until the sweet potato becomes soft.
